[b]Objectives [/b]: [b]Keeping in mind the significance of strict compliance of quality of curd, and the useful properties bacteriocins exhibit, this study was carried out with the following objectives [/b]: 1. To check the microbiological quality of curd. 2. To check production of bacteriocin by lactic acid bacterial isolates. 3. To check the antimicrobial activity of bacteriocin against test pathogenic strains. I performed experiments like standard plate count, yeast and mould count, enumeration of LAB, some other specific tests related to micro-organisms and bacteriocin.
