    Academic Project
    Project : Microbial Examination of curd and test presence of bacteriocin
    DESCRIPTION
    The project work was experimental in nature with an emphasis on microbiological quality of curd and bacteriocin production.
    Objectives :
    Keeping in mind the significance of strict compliance of quality of curd, and the useful properties bacteriocins exhibit, this study was carried out with the following objectives :
    1. To check the microbiological quality of curd.
    2. To check production of bacteriocin by lactic acid bacterial isolates.
    3. To check the antimicrobial activity of bacteriocin against test pathogenic strains.
    I performed experiments like standard plate count, yeast and mould count, enumeration of LAB, some other specific tests related to micro-organisms and bacteriocin. Out of 14 curd samples 2 showed the presence of bacteriocin.
    Training : 1 month training from Verka Milk Plant, Ldh.
