    Effect of different rice processing methods on the in-vitro digestibility of Idli.
    Description
    The project aims at different processing method of rice to control the release of glucose from the fermented food product, idli, so that it could be made suitable for the Diabetic diet. Rice and rice products consumption has greater influence on diabetes. Proper treatment of rice may alter its physio-chemical properties and therefore the release of glucose from rice may get reduced. An in vivo method to estimate glucose release from the food source is expensive and time consuming and hence an in-vitro digestion method using the enzymes-pancreatin, pepsin, guar gum and amlyoglucosidase was carried out for different idli samples.
    Idlies were prepared using the different varieties of rice, and the raw rice which was subjected to heat treatment. The results were obtained on the basis of dry matter of Idli and compared on the basis of RAG (Rapidly Available Glucose), SAG (Slowly Available Glucose) and slope values of rate of increase of glucose. The idli made out of heat treated raw rice showed a very significant lower RAG, SAG value and a low slope value.
    M.Tech PROJECT (MINI)
    Effect of a few processing and cooking methods on the in-vitro digestibility of Rice
    Description
    An in vivo method to estimate glucose release from the food source was expensive and time consuming hence an in-vitro digestion method using the enzymes-amylase and amlyoglucosidase was developed. In vitro digestibility of cooked rice produced from different varieties of rice, pre treated rice and different cooking was carried out. The results were obtained on the basis of dry matter and compared on the basis of RAG (Rapidly Available Glucose), SAG (Slowly Available Glucose) values. It was seen that the heat treated raw rice and cooked showed a very significant lower value of RAG, SAG and slope values.
