Job Specification :
1. Ensuring that established standards of performance are maintained, achieving maximum guest satisfaction.
2. Ensures standardized training provided to staff, as and when required.
3. To work with the Head Cook for the continued achievement of high quality standard, and for the maintenance of a maximum level of profitability in the service and production of food.
4. To maintain an up to date knowledge of local & international market trends.
5. To be constantly aware of the competitors.
6. To be responsible for the hygiene of the restaurant and the kitchen area.
7. To ensure smooth operation at all times by conducting spot checks for any repair and maintenance requirement, and follow up for an urgent completion of the job.
8. To be responsible for the banking function, ensuring that all banking is conducted within the specified norms of the organization.
9. To promote items as chef’s specialties, monthly beverages promotion, etc.
10. To coordinate with the kitchen and ensure portion control, quality and presentation and bring any deviations to the attention of the Corporate Chef.
11. Prepares and submits monthly revenue analysis report highlighting the previous month performance, variances (if any) and other relevant information.
12. Ensure timely submission of daily reports, in the specified format. These reports include revenue and cost, guest comment cards, follow ups of pervious comment cards.
13. To ensure all complaints, especially those of a serious nature, are handled personally, with a detailed report to the General Manager-Operations.
14. To ensure operating equipment inventory is conducted on a daily basis, and that a report is submitted to the General Manager-Operations.
15. To randomly check food for quality.
16. To highlight any problems faced by the staff, which requires the Management’s immediate attention.
17. Attend all training programs organized.
18. Maintains all records for the restaurant (e.g. attendance, leave, addresses, comment cards, guest correspondence, etc.)
19. Maintain copies of all licenses and permits required in the event of any spot enquiries by the concerned government authorities, and to remind the management as and when renewal is required.
20. Conducts daily briefings for every shift, as per the standards laid down.
