TOPIC : STUDIES ON VACUUM DRYING CHARACTERSTICS OF CAULIFLOWER
To optimize the drying parameters of cauliflower in vacuum drier and study the quality characteristics of vacuum dried cauliflower florets.
It was observed that drying rate increased with vacuum pressure, retention of ascorbic acid was good and rehydration ratio was also high for vacuum dried cauliflower florets.
