Job Description
General
Is a Member of the Unit Executive Committee. Participates in regular meetings for review of business issues. Takes necessary action based on the discussions. Will officiate as Head of the UEC in the absence of the RGM.
Systems/Operations
Constantly seeks to ensure that Team efforts result in achieving a 'WOW!' experience for the Guest. This will be achieved by personally checking on service delivery from time to time and providing needed intervention to maintain food, beverage and service quality at very high levels.
Defines the organization of work within the Kitchen including assignments, time schedules and vacations of staff.
Ensures a very high standard of Hygiene and Cleanliness of Physical Areas, Equipment & Employees.
Ensures availability of stock and raw ingredients by proper planning and co-ordination with Purchase and Stores.
Ensures the best quality of raw material is produced and used in food preparation.
Plans and ensures an effective preventive maintenance programme in the kitchen.
Implements standard recipes and methods of preparations, as specified for a TYC. Ensures quality of output is consistent and meets the Marks of Quality specified for each dish.
Analyses and monitors costs, (material, energy and staff) to ensure high profitability on a regular basis and initiates corrective action wherever necessary.
Ensures storage of raw and cooked food / raw material is as per specified standards.
Keeps oneself updated with market knowledge and trends by conducting regular market surveys, in co-ordination with the Purchase Department.
Marketing
Personally interacts with Diners at the restaurant. Will make an effort to know regular Guests. Will seek feedback from Guests and initiate corrective / other action as necessary.
Assists with preparation of the Annual Marketing Plan. Helps with situation analysis and opportunity identification for improving the sales numbers.
Actively monitors Guest Feedback Reporting.
Ensures the timely and proper execution of promotional activities planned for the Unit. Actively monitors Costs and Results achieved with a view to understanding the cost-benefit relationship of various initiatives.
Contributes to discussions regarding the Pricing Strategy with the RGM and the Unit Accounts Executive.
HR / Training
Keeps fully briefed on the sanctioned strength, hiring criteria and budgeted Employee costs for the Unit.
Ensures that all recruitment is done in line with Position Guidelines and specified Hiring Criteria for each position.
Inducts and orients new joinees as per specified processes. Ensures a smooth integration for each new employee into the TYC Team.
Implements all rules and regulations in a fair and even handed manner.
Identifies training needs and ensures minimum training norms are met for each employee and position. Coordinates with the Corporate Training Team to achieve the Unit's training objectives.
Coaches and counsels subordinates.
Uses the appraisal system to review the performance of direct subordinates and determines their development needs.
Attends behavioral and vocational training in own and related work areas to enhance skill and develop multi - functionality.
Recommends hiring, promotion, increments, disciplinary action, performance related salary increments for all subordinates.

Desired Candidate Profile
Total work experience of atleast 10 years. 3 - 5 years experience as a Sous Chef in a hotel or restaurant of similar standard and operation.
Two years working experience in an international hotel is desirable.
