5. Opened 3 hotels over 5 years at the One&Only Royal Mirage, Dubai. I was the only Indian / Asian Manager (French & British Management) for the pre-opening and post-opening operations of the 3 properties. My final position was of F&B Operations Manager for one of the Hotels - The Arabian Court and Beverage Manager for the whole resort, reporting to the Hotel Manager.
6. I opened Dubai's first Arabesque, three Level concept (Sports bar, Main Dance and VIP Bar) and till date the most prestigious night club – Kasbar (1000 Covers), at the One&Only Royal Mirage.
7. I was part of the team that conceptualized, designed and implemented all the F&B Concepts of The One&Only Royal Mirage - these included a Medzo restaurant, a Beach Bar& Grill, a Fun dinning elegant restaurant, a Moroccan specialty restaurant, 2 Arabian themed restaurants, a Roast & Grill restaurant, an elegant Seafood Pan Asian restaurant, I Lobby lounge and bar, 1 specialty Coffee& Tea Lounge, an Esplanade & Pool Bar and 2 of the most stylish and successful restaurants mentioned below. In charge of Conference & Banqueting facilities.
8. I was responsible for the concept of Nina - Dubai's first Indo Euro Restaurant and the Rooftop Lounge & Open Sky Bar!
9. I was in charge of the entire beverage inventory and F&B budget, Cost control, Recipe Implementation and costing, micros set up, Fidelio and the operating systems. I was in charge of the F&B 3 Months action Plan and Revenue results.
10. I have travelled extensively for recruitment of the entire F&B Dept. Implemented HR & Training policies. I was the head of F&B Training for the resort. I was an integral part of the quality department representing F&B - for Guest satisfaction analysis and results
11. I was personally responsible for Sales & Marketing of all Hospitality Events. I initiated and conducted Dubai's first medzo festival from Greece. Dubai's first Cabaret Parisian show - with Jean Pierre Pousse of France. A Mauritian themed festival, Lifestyle Night with Moet Hennessey and Corvette Luxury Cars. I brought Brand Davidoff to the night club scene in Dubai.
